The first ones: Carrot, Potato and Yam pancakes (serve as the starch beside an egg dish) For 4 guests:
Coarsely grate the potato, carrot and yam together in a bowl. Chop the green onion and add to potato mixture. Add egg, flour salt and pepper and mix thoroughly (easiest with your hands, make sure you wash them first!) Heat a large frying pan (or griddle), add 2 tablespoons vegetable oil (or bacon fat) to a medium high heat, if the oil smokes, the pan is too hot. A drop of water should sizzle immediately. Make 2 or 3 pancakes per person, about 2 to 3 inches across, fairly flat. Pancake should be thin, about the thickness of 2 layers of potato. Fry on both sides until the outside edge is crispy and serve immediately. Shirred eggs with Bacon and Mushrooms: This is for one ramekin, 10cm X 2 1/2 cm (4" diameter, 2" deep).
Spray ramekin with cooking spray (or wipe with vegetable oil) Place first 3 ingredients in Ramekin, make a well in the middle and crack egg into the well. Pour cream over the egg and sprinkle with basil and grind some pepper over the egg. Cooking methods: Using microwave and oven- microwave on high for 35 seconds and place cheese on top before putting in oven preheated to 425 f. Bake for 10 minutes or until cheese starts to brown. Traditional cooking method- Place ramekins in a waterbath (heatproof dish to hold the ramekins and water 1/2 way up the side of the ramekin); Put in oven heated to 350 f and bake for 15 minutes, add cheese on top and bake for further 10 minutes until cheese starts to brown Serve with Carrot, potato and yam pancakes (two 3 inch pancakes). |
